Chef's Restaurant The Ramounéda family's fine history at Le Florida, dating back to 1935, continues in a less "musketeer", more contemporary mode, with the invaluable contribution of Marc Abramovici, who worked at Orsi and Santi Santamaria, among others, and was a commis here many years ago. The cuisine is interesting, blending flavors with local products, with semi-cooked foie gras and smoked eel, squid stuffed with mushrooms and caramelized pork belly with red flock, roast suckling lamb with vanilla and smoked leek, and good homemade desserts (Impérial with Peruvian chocolate). In early 2024, Baptiste Ramounéda handed over the Florida to Manon and Rafael, who know the place well and are determined to continue the story.
