Chef's Restaurant You'll come back again and again with the same pleasure, and the certainty that you'll never see the same plate twice. Chef Elmahdi Mobarik and Sébastien Perinetti in the dining room have created a cuisine and service that will delight regulars and those lucky enough to have a table. The finest produce from the surrounding hills and local fisheries are given pride of place, and a simple squash velouté from La Gaude with its Brigasque sheep's ricotta speaks volumes, as does the organic spelt couscous with Aveyron lamb, which is cut with a spoon, with good vegetables from small producers and homemade harissa accompanied by t'faya (caramelized onions and grapes). Desserts are in the same vein: organic apple tart from Saluzzo, mandarin cake from Villefranche... In the cellar, Sébastien doesn't have a wine list, but offers around 250 references, with a predilection for living or biodynamic wines.
