This is what you might call a "bistrot d'humeur", where you don't compromise on product provenance or quality. Seasonal vegetables from the market gardeners in the hills, almost exclusively local produce, provide the basis for an appetizing and personal slate of dishes. This is the aim of this "coup de Canon", which has not finished making a name for itself and which, in its identity, is something of a unique model in Nice, far removed from the tourist canons.
