Chef's Restaurant Character and authenticity: this bouchon may not be at the heart of Lyon's "bouchonnerie", but it is a great representative. Because it's not enough to pile up recipes: you need a soul, a heart for the job, and a touch of love. And that's exactly what you'll find at this cheerful address, which makes you want to return to it again and again. "Chez Périer", with mother in the kitchen and son in the dining room, is all about the authenticity of the place, the plate and the human warmth. The menu features lentils and calf's trotters, andouillette gratin, lamb brains meunière, calf's head, pike quenelle, homemade canut brains. Beaujolais, like kindness, flows on its own.
