Chef's Restaurant It takes a certain talent and a great deal of hospitality to bring a corker experience to life so naturally and obviously. Chez Périer is a true moment of authenticity, a feeling of being with friends, and the sincere smile of the owner, happy to welcome and share. Son Maxime is in charge of service and the cellar (no fewer than 1,200 references), while mother Florence is behind the stove in the open kitchen, delivering anthology dishes, a menu of perfectly executed traditions and always recommended suggestions. The herring with apples in oil is exemplary, right down to the presentation, as is a very fine hare à la royale in a glazed sauce and a cocotte of fresh tagliatelle, a real chocolate mousse, like an eulogy to simplicity. Friendly service and an infinitely convivial atmosphere.
