Year after year, the bistro establishes itself as a benchmark, with its seasonal dishes and obvious savoir-faire, knowing just as well how to position itself on lunch menus as on more elaborate formulas. The €48 menu is a real work of art, with salmon in gravelax, chickpea hummus with yuzu, seaweed gomasio, trout roe and radish pickles, langoustine risotto, mushrooms, chives and truffle oil emulsion, normandy beef fillet, snacked polenta, summer vegetable ratatouille, oregano jus, pineapple pavlova, lime mascarpone cream, coconut ice cream and pan masala.
