The setting is in keeping with the theme, with wooden tables, Vichy tablecloths and a modest table setting, ideal for introducing mushroom puff pastry with cream and lamb's lettuce, whiting soufflé with tomato and saffron pomme anglaise, rabbit with mustard and creamy polenta, and the three-chocolate terrine.
