Remarkable Restaurant Gaétan Morvan has not lost the audacity, intelligence and modernity of his creations, which foreshadow the cuisine of tomorrow, even if we hope that the fashion for the imposed hidden menu will eventually fade. If local products are the mainstay of his creations, he doesn't hesitate to add a touch of his travels and discoveries: Crémet d'Anjou is revisited with three-cooked white asparagus on fish roe; pan-fried foie gras swims in a Thai broth, but is accompanied by two-textured Saumur mushrooms; marinated and confit beef from Jersey cannot be enjoyed without a veil of periwinkles; and iced lemon balm for dessert is accompanied by a compote of rougette, in a daring, intelligent and thoughtful sequence. Nothing is left to chance, and the food and wine pairings, with or without alcohol (like this extraction of red shiso and iced hibiscus), work perfectly. Good service supervised by Fanny, the chef's wife, and an excellent Loire wine list (Tessa Laroche, Damien Laureau, Mark Angeli...).
