Gourmet Restaurant Craving and imagination: even if the overuse of fruity-savory dishes can sometimes be disconcerting, chef Ilies Besançon knows how to play with textures and temperatures with inventiveness, in this vast, well-restored Landes house, with its contemporary interior and beautiful view of the park and lake. You'll go from a classic, gourmet mushroom raviole with hazelnut emulsion, to an original, coherent sole with peas and strawberries, or to the celery mille-feuille in a veggie dish with Kampot sauce, before a more classic strawberry-rhubarb, lemon balm and tarragon dessert. Attentive, smiling service, a slightly larger cellar than last year, local beers and three varieties of kombucha.
