Memorable sunsets are the perfect accompaniment to Mickaël Marcoux's delicate, well-mastered cuisine. Menus are ethically based on the region's terroir: ikejimé tuna tartare, granny-smith apple, chiogga beet, lime, espuma and beet gel; cod back, squid ink risotto, glazed bimis, champagne emulsion and herring caviar; or pork cheeks confit like a blanquette, truffled virgin with carrots and spring onions, toasted bread gnocchi.
