In this beautiful Provencal village, well known for its luxury hotels, the table de Pôl is a more relaxed place to enjoy Julien Collard's good ideas, both regional and contemporary. Taking over from Raphaël Revalor, the young chef revisits traditions with good intuition: snacked scallops, carrot purée with honey and orange marmalade, rolled hake with black olive tapenade, fennel brunoise, taggiasche olives, pine nuts and fennel jam, confit and shredded lamb, navarin-style lamb jus, white onion and almond condiment.
