Prestige Restaurant Schoolchildren of yesteryear learned a date in their history books - 1525 - associated with a beating inflicted by Charles V on Francis I, known as the "Disaster of Pavia". Centuries have passed, and 21st-century gourmets know only the joy of Pavia, the victory of Pavia, the triumph of Pavia in Saint-Émilion. It's a real pleasure to sit on the magnificent terrace of La Table de Pavie, before joining the chic and tasteful dining room of this beautiful Perse family home. The good news is that, in addition to the two menus on offer (€180 and €230, or €85 and €115 at lunchtime), the menu allows customers to choose their own dishes. We're quickly immersed in the Alléno universe, with extractions, juices and sauces that are the hallmarks of this excellent cuisine. Brilliant executive chef Sébastien Faramond starts with a nod to the South-West, with a garlic tourin that dazzles with its precision, before moving on to a caviar-coated egg that leaves you in awe. Vegetables and their flavors pushed to the extreme find a place with tomatoes worked from flesh to seed, pieces of juicy peach and rice jelly with basil oil, young leeks and shiso fritters, a novelty of unsettling finesse and totally mastered. The sweet score is just as explosive. Sébastien Nabaile pushes flavors into well-tuned, daring concentrations, ensuring that he takes risks. To complete the picture, the cellar is of the same exceptional standard, while keeping the bottles affordable, with Benoît Gelin as the perfect sommelier.
