Chef's Restaurant In the heart of Marseillan, the house where Achille Maffre de Baugé was born is home to La Table d'Emilie, whose walls and superb wooden doors are listed. Dinner is served in a vaulted room, with original stonework, large sandblasted tiles on the floor and indirect lighting, extending onto a pleasant patio for fine weather, totally sheltered from the noise, and decorated with beautiful Anduze vases and attractive vegetation. The ambitions of Thomas Sanvoisin (a former member of La Barbacane) are in tune with this charming setting: quality products, carefully prepared and presented dishes: Mediterranean sea urchin with subtle flavors, parmesan gnocchi, sea urchin bisque and mackerel roe, veal sweetbread heart, very well cooked, white asparagus from the Cévennes in a Colonnata bacon jacket, strawberries and rhubarb in texture and elderberry fragrance for a fresh, fruity finish. Impeccable service, with all the necessary explanations, well-constructed cellar, guided by a competent sommelier.
