The annexe de la Marine has been given a makeover, with an original concept facing the port of L'Herbaudière: a fishmonger's side with the best of the day's catch, then a vast counter overlooking an open kitchen, a few tables in front of an imposing glass cellar, and the stage is set. A young, enthusiastic team invites you to take an iodized stroll, starting with a monthly menu of shrimp broth; oysters in a dressing of fermented paste and yuzu zest transport you to a world where purity, precision and the product are present without fuss; another example is braised sea bream in a honey and ginger jus, or julienne in Japanese quick butter on a confit of seaweed; desserts flirt with the desire to dip into your neighbor's plate with a Jerusalem artichoke-fried ice cream or a pistachio cabbage with a crunchy chocolate sauce made from crushed cocoa beans; the wine list reflects the image of the place, focusing on the best of the Nantes region and a vast choice of wines by the glass. A refined cuisine that sublimates seafood with such talent that there's no need to overdo it on the plate; this perfection at an affordable price is clearly leading us to the three toques.
