Chef's Restaurant Les Trésoms is one of those grand mansions overlooking Lake Annecy, and the locals are quick to celebrate any number of special occasions. In return, the flagship restaurant does its utmost to prove itself worthy of such attention. Chef Eric Prowalski is getting better and better at his job, moving from table to table at the end of service with a certain enthusiasm, prolonging the enjoyment of the meal. And if, here and there, the apparent luxury becomes a little cramped, the intention is sincere and the performance on track. Starting with the plate, still perfectible in certain respects, but well committed to seasonal local produce, assertive vegetarianism and some brilliant ideas, such as the Jerusalem artichoke-chocolate nut combo that the chef combines as an appetizer before reworking it into a brilliant epilogue at the end of the meal. In between, there's the delicate trout married with agaric (petals are nice, but don't overdo it), trout roe sauce, all delicacy and character, cauliflower in all its states, the chimera of féra and sole with a gamay sauce that deserves more power. An audacious marriage of apple and samphire for a sweet and savoury dessert that's rather puffy, and the three toques should be back soon, so many efforts have been made. A cellar with 500 references, rather wise in its composition as in its prices, served by a committed young sommelier, Maxime, who helps you discover one of its real assets with a selection from Swiss vineyards.
