Remarkable Restaurant He always has a way of catching up with you: Denis Fétisson is a southern chef, full of verve and sincere passion, not only for his craft, but also for his customers. You have to see them, the regulars of this house in the heart of Mougins, come back as if last week or last month, greeting everyone, happy to cross the threshold as a promise of guaranteed happiness. Couettard comfort, with its pleasant veranda opening onto the village square, sets the mood, supported by a top-notch female team led by the chef's wife, and an excellent maître d'hôtel sommelier, Stéphane, with his gentle, empathetic verve. The luxury here is good-natured: starters follow the codes of prestige (lobster, langoustine, caviar...), the champagne flows, the prices are Azurean, but in such a touristy location, such a restaurant is ultimately a godsend. The truffles are present, but the dishes are always generous, in the image of Philippe Da Silva's work at Pennafort, to which the chef pays a fine tribute with his ravioles of foie gras and purée, so gourmet and in the truth of the place. Admittedly, we weren't too keen on the sweet potato tataki escorting the excellent turbot on an overly acidic miso jus. But the memory of the remarkable bouillabaisse or the lamb, both still on the menu, doesn't make us doubt for a second the level of this loyal house. A very good dessert of pear caramel and chocolate chips with Tonka bean arlette, and a well-informed wine list with a good selection by the glass, starting at €9 with the Reillanne white or rosé.
