It’s one of those beautiful bourgeois restaurants with a well-established and distinct clientele—loyal regulars who return time and again for the comfort and the fine ingredients, escaping from Cannes to return to the hills of this magnificent village. You can sit down here with confidence, assured that Denis Fétisson’s dishes will showcase all the grandeur of great Provençal cuisine. The menu is rich and varied, with a sense of dignity evident both on the plate and around the table—including in the service. The €85 set menu is well-balanced—neither overly lavish nor too simplistic—showcasing some of the region’s must-try dishes: the signature appetizer of golden egg with Petrossian caviar, Japanese pearls in ginger vinegar, and small croutons; a masterful take on bouillabaisse as a consommé, featuring steamed monkfish with lemon leaves, croaker, and Mediterranean octopus; buckwheat gnocchi with rouille, or lamb from the Ferme des Palets—shoulder confit in olive oil and leg parcels with garlic pepper, roasted eggplant with anchovy oil and smoke, tangy romaine lettuce, chanterelle mushrooms, and a Saint-Julien thyme jus. The wine cellar is well-stocked with wines from this region and features a rich selection from elsewhere as well.
