Remarkable Restaurant Year after year, the Deckert family continue to improve this adorable half-timbered Alsatian house, with its elaborate balconies and vineyards. The latest addition? A pair of storks and their nest at the bottom of the garden. The dining room, with its sober, hushed decor and unobstructed view of the apple trees and discreetly staged garden, is very popular with guests from Baden-Baden. In the kitchen, the indefatigable Cédric Deckert may not have revolutionized the gourmet menu at Outre-Forêt, but he has a way of making everything he touches gourmet. Every dish we taste is beautifully polished and classic wisdom enlightened without boredom, whether it's the famous potato emulsion with melanosporum truffle, the tender, fleshy pigeon cooked pink, or the Breton skate, a fish not easy to work with, which, by magic, is simply sublimated. The fundamentals of French classicism are there, with reduced juices and always that Robuchonnian purée that accompanies every dish. Sweet tooths won't be disappointed by the desserts, such as the fine apricot pastilla with kirsch parfait and yoghurt ice cream, a fresh ending to the meal. Fans of intense dark will not be disappointed by the Costa Rica 71% soufflé chocolate tart, enhanced by a goat's milk ice cream and Tahitian vanilla. There's plenty of attention throughout the meal, right up to the final bouquet of three chocolate drawers. Christelle Deckert, who has an eye for everything, leads a solid team of young wolves who have passed through the ranks of the great houses, while Joël Brendel, a Cheval Blanc defector, advises on a well-crafted classic cellar, now presented on a shelf.
