This is a serious business with no reason to change either its approach or its regional recipes. You'll appreciate the regularity of the daily fare, including museau, homemade terrine, flamiche with maroilles made fresh on the spot, andouillette, carbonade, potjevleesch, filet américain, tripe... All the generosity and loyalty of the Nord region in a single house, right down to the cramique and profiteroles.
