Nicolas Rapenne's house is a sure bet in the old town, a chic table in a former 16th-century mansion. The tone is hushed, the service is attentive, and the setting is designed for special occasions, where diners will gather around a revisited traditional cuisine. On the €51 menu, foie gras de canard de la ferme des Saturnins, turmeric chutney and nectarine, toasted bread, snacked sea bass fillet, hay-smoked carrot mousseline, chorizo cream, beef cheek confit, crispy polenta, caramelized onion purée and honey carrots, caramel and tarragon cream.
