A strong tradition is cultivated, with progressive touches to win over the appetites of tourists and locals alike: fish quenelle with eggplant caviar and langoustine bisque, duck effilochée on brioche bread with a port reduction, as well as octopus tartare and snacked sea bass with artichoke and fennel.
