The good excuse is perhaps not always to follow the seasons (scallops in June, bof), but to follow a sincere line in execution, for what attracts customers: foie gras au torchon date cream, grilled turbot orange and ginger sauce, Aveyron veal girolles salmis sauce, chocolate coulant and ice cream.
