Remarkable Restaurant As you may have guessed, chef Naoëlle d'Hainaut's favorite flower is the orchid. This asserts a form of distinction in keeping with the beautiful house at the foot of Saint-Maclou Cathedral. The cuisine showcases regional produce, notably through a fine €95 tasting menu featuring a number of signature dishes: scallop carpaccio with celery, yuzu cream and madras curry vinaigrette starts the meal off fresh, before Hungarian blue pumpkin soup, candied kumquats, roasted pumpkin seeds and passion fruit espuma. Cod, the fish of the moment (we could hope for something more relevant), is pearly cooked, delicately set on a bed of caviar lentils, garnished razor clams and a delicious Normandy sauce, preceding Angeline's imperial pigeon roasted on the trunk and confit leg accompanied by celeriac, chestnut, linseed crumble and a full-bodied jus. An elaborate cheese and peanut dessert consolidate the three toques, and the cellar is rich in all regions, with a very wide choice of whiskies (the chef's husband has just opened a wine bar in town to complement the business).
