Gault&Millau's review 2026

Choosing such a name, in homage to one of the world's largest diamonds, is not without risk when targeting a clientele which, given the rates charged, is more often than not familiar with luxury establishments. The hotel is indeed of a high standard, the view is spectacular, it's true, and the terrace is unforgettable, let's face it. At the piano, Antoine Cevoz-Mamy, a former member of the Château de Candie (Campanella period) and of the Bateau Ivre, officiates in a contemporary register that gives pride of place to noble products, presented with skill and personality.
