Chef's Restaurant For years we've been following the work of Nicolas Rucheton, who efficiently maintains a fine two-toque standard in his elegant auberge twenty minutes from the metropolis. With his wife Constance, he has created a cosy, chic cocoon where he prepares personal dishes that are always interesting: tuna tomato bloody mary, cod fennel lemon saffron shellfish emulsion, Aubrac beef confit in red wine chorizo and bell pepper, apricot rosemary honey almond sorbet yogurt lemon thyme. Very solid wine list from all regions, with opulent Loire, Burgundy and Champagne wines and great references.
