Remarkable Restaurant Sobriety and efficiency are the hallmarks of Eric Vidal, who runs his fine business on this pretty cobbled street at the entrance to the old town, with his wife Magali. High-quality products, little room for improvisation, it's all experience that bears the seal of a job well done through plates rich in flavor and technicality: cabbage stuffed with porcini mushrooms and pig's trotters with snails in mushroom juice, caramelized doe back with black garlic parsnip and beet sauce civet grand veneur, hot passion soufflé in this beautiful €72 sequence, convertible into four stages for €92. Flawless service, truffle menu in season, cellar with fine references from all regions.
