Gourmet Restaurant A chic brasserie that Toulon has been lacking, with its elegance and good taste. Located in this 4* boutique hotel not far from the port, l'Équerre boasts a beautiful room with a 19th-century glass roof, and a Mediterranean kitchen designed by Nicolas Maier. The latter offers some fine reinterpretations of the theme, to be discovered in particular in his €52 menu: Jerusalem artichoke velouté, ewe's cream and Provence honey, walnut and savory crumble, a fillet of Cannes sea bass, celeriac purée, confit potatoes and cider fish stock, ballotines of free-range poultry, shiitakés, parsnip mousseline, glazed vegetables and reduced jus, a floating island, pine nut granola and aniseed caramel. Cellar and mainly local, with fine references (Pibarnon, Clos des Fées, Vieux-Télégraphe, Combier, Foillard...).
