For the past twenty years, Nicolas Tougard has been striving to maintain Eden's heavenly reputation as a safe, well-preserved and well-mannered place to enjoy a meal. A good example of this is the €39 menu, featuring mackerel à la flamme, Normandy quinoa and beet, hake fillet risotto and bisque, or 24-hour confit beef cheek, Cluizel chocolate mousse and Périgueux cookie.
