In the Ouche valley, Christophe Faivre's restaurant is a recommended stopover before arriving in Dijon. A well-cared-for ambience and subdued lighting add to the restaurant's cosy charm, while the personal, creative approach to produce goes beyond simply reproducing local recipes. The Au fil du temps menu is a good compromise, with its marble of grilled vegetables, basil maceration, feta cheese and dried beef shavings, its fillet of redfish, fennel juice with preserved lemon and tomato condiment with Kalamata olives, its medallion of free-range chicken stuffed with cheddar cheese and sundried tomatoes, or its beautiful declination of lamb with the flavors of Provence. On the sweet side, try the deconstructed chocolate millefeuille with Morello cherries, or the Vélars delight with blackcurrant and white chocolate mousseline. Menus from €22.50 to €60
