The chef champions a cuisine based on fresh produce and contemporary recipes, with menus ranging from €23 to €75. On the €45 menu, scallop carpaccio and low-temperature veal, citrus fruit, lime and vegetables; filet mignon of pig and low-temperature brisket, shrimp and bouillabaisse jus; maigre à l'unilatérale, grilled bacon and veal head, gentian beurre monté; citrus dessert and kalamansi cream.
