Gourmet Restaurant A change of crew at this waterfront institution. Julien Gourmelen and Adeline Moiroud are now at the helm. The small, intimate "winter" room, attractively furnished in shades of gray, white, blue and gold, is extended by an equally comfortable veranda room in a very pleasant seaside style. Julien likes to play up land-sea contrasts, as he did that day with roasted langoustines and a melting veal tongue, albeit excessively dominant. A carcass jus and seasonal vegetables provide the link. A more convincing contrast is provided by an impeccable section of sea bass with beef marrow and a clean meat jus. A spinach and citrus drop provides the necessary freshness. As for the sweet sequence, there's no risk-taking with a dessert that wins hands down: a fine de Bretagne soufflé accompanied by a caramel-buckwheat ice cream and a prune bursting with the same alcohol. No doubt the cellar (some twenty references) will soon be expanded. In the meantime, you can always opt for a Coteaux d'Aix Château Paradis or a Mercurey Agnès du Couëdic.
