This mythical institution lives on a noble heritage, which is inevitably a little heavy, so much so that it requires the memory of Philippe Da Silva to continue his work with respect and constancy. Anthony Salliège has the onerous task of nurturing this legacy, with a cuisine drawn from the memories of a long friendship, with an emphasis on Nouvelle Cuisine and sweet and savory combinations. The Découverte menu unveils its tributes: foie gras and cherry, a combination of red mullet, Iberian ham and melon, foie gras and Parmesan ravioli, veal onglet, octopus and redcurrant reduction, and a milk chocolate sweet.
