An institution on the road to Castelnaudary, the Rousselot family is home to the famous cassoulet impérial, the flagship of local cuisine. The hospitality and rigor of the recipes are still the order of the day, and you'll be sure to come back to this authentic Gascon den for daube de boeuf (beef stew), navarin d'agneau (lamb stew), leg of duck confit, monkfish à l'armoricaine (Armorican-style monkfish) or gambas à la Rousselot (Rousselot-style prawns).
