In a modern, hushed setting, the chef takes you on a journey to the heart of Burgundy, with a few deviations to the south, such as salmon carpaccio with two lemons, roast cod with pistou, lamb mouse confit with rosemary, a fine fillet of beef with shallot confit in red wine, or a crème brûlée with Madagascar vanilla.
