Gourmet Restaurant Opening in 2021, George's restaurant, adjacent to the Le Toiras hotel, boasts views of this majestic 17th-century shipowner's residence and the port of Saint-Martin-de-Ré. Magnificently restored in a monochrome of white and cream, the hotel's facade extends into a very comfortable terrace decorated in the same tones and overlooking the port, where you can enjoy a drink or sample the cuisine of new chef Jeffrey Ng Cheong Wong. The interior is decorated in a chic blue and white scheme. The Mauritian-born chef relies on regional produce, which he sometimes combines with spices from his native island: vindaye hake with sliced squid ink risotto featuring turmeric, mustard, vinegar and chilli, or guinea fowl supreme with black garlic and Retaise beer cream. The tableware is delicate, the silverware fine, the view incredible. The kitchen will have to be upgraded a little to match the surroundings. Service is fluid and distinguished, in keeping with the standing of the house, as are the vintages offered on the wine list, which includes Pétrus and Romanée-Conti.
