The form may be a little old-fashioned, but the substance is as pleasing as ever, with the chef drawing on all his experience to renew, with a certain intelligence, the recipes that have made him a success. Specialties such as king prawn tails fricasseed with oyster mushrooms, sea bass fillet with creamy butter, beef tournedos with tarragon sauce, and veal kidney medallions are all well appreciated.
