Chef's Restaurant In 2024, the restaurant celebrates its fifteenth anniversary without the slightest hint of running out of steam. Anthony Barrucand and Jean-Sébastien Faber, the two partners behind the project, have found the right balance to create seasonal cuisine that's fresh, essentially local and contemporary: foie gras soup with muscatel wine, red onion compote and cromesquis, omble-chevalier, fricassee of salsify with morel mushrooms and calamarata pasta, before a fine seasonal dessert featuring pear, hazelnut and yuzu in a temptingly priced menu-card. The two toques are as solid as ever.
