Clément Guillemot is constantly reinventing himself around local produce, some of which he selects directly from his organic vegetable garden. A highly aesthetic approach draws the eye before appreciating the elegance and creativity of the cuisine. The gourmet stroll can take you on a journey, for example, with the twirling langoustines in red curry, or anchor you in the terroir with a surprisingly elegant cod pavé. We'll be tempted to try a little cognac with Choko-Gnac, which offers a delicious combination of chocolate and cognac. The wine cellar built by Flora Le Pape is always full of surprises, providing the perfect accompaniment to this well-constructed cuisine.
