Halfway between Lyon and Saint-Étienne, this magnificent 1920s Italian Renaissance house is now home to a 3* hostellerie and gourmet restaurant, run by Sylvain Roux. The chef's cuisine is in keeping with the place, in a spirit of bourgeois chateau: a tourteau de casier, ponzu, citrus fruits, textured cauliflower and sea urchin cream, a back of cod with Guérande salt, potimarron, clementine à la flamme, tom kha broth with pearl coconut milk, a filet of barbecued guinea fowl from Haute-Loire, taggiasche olives and green shiso, glazed scorsonères, Cévennes onions, tart pear, albuféra sauce, a dessert of Valrhona manjari dark chocolate, pecan praline and kalamansi lemon. Good service.
