Chef's Restaurant You can admire the works of Pierre Soulages, then those of Michel Bras, or vice versa, and never be disappointed. Sailing in an equal universe of elegance and minimalism, both artists cultivate a taste for delicate relief, subtle gesture, embodying at the same time all the difference in the world, that excellence of detail that distinguishes black from black, tradition from tradition. This is how, in this fascinating place, a monolith of straight lines and volumes resistant to curves, chef Christophe Chaillou cultivates a rediscovered taste for the essentials, a fragrant, tangy broth in which cabbage stuffed with vegetables, shellfish and bulgur bathe, or a modern cabbage soup, a superb guinea fowl breast worked like a veal blanquette, with exemplary small vegetables and a refreshing touch of ginger, a dessert in a small pot like a return to childhood, chocolate ganache, cookie, hazelnuts and salted butter caramel. A fine cellar of local (Domaine Mousset, Laurens, Patrick Rols) and international (Sandrine Farrugia, Elian Da Ros, Maxime Magnon) wines.
