Still run from a distance by Laurent Petit, and ideally located between the station and the town center, this brasserie retains its regional image, with the vast majority of its suppliers local and farm-based, and serves traditional cuisine that appeals to a wide range of tastes. The menu, priced at €40, is generous and offers a wide choice: beef ravioli with ginger and lemongrass in a pot-au-feu broth, arctic char confit with verbena butter, sabayon and crumble, small spelt risotto with shiitake mushrooms, brioche perdu with beer ice cream and caramel sauce. Large sharing dishes (jarret confit, entrecôte salers maturée...), professional service and a well-stocked cellar: this is one brasserie!
