Chef's Restaurant In the heart of the old quarter, on the pretty Place Saint-Projet, this is a table that counts in the landscape, bringing together friends of friends for a lively bistronomy full of ideas, and not just fashionable ones: salmon sour sauce and grilled portobellos, haddock with calamansi, hazelnut potato mousseline and bottarga, roast poultry with cabbage achards and green beans with poulette sauce. Both inventive and inexpensive (expect to pay around e60 for the full à la carte sequence), right down to the inspired dessert (creamy ginger pear with blueberry red wine granita...), this cuisine is nothing short of seductive and right up to date. On-time service, good introductory menu at €45.
