Gourmet Restaurant A restaurant for friends, and a nice project: to meet in a modern, warm place, with a relaxed service. There's no doubt about it, this Bistrot-Bouille has a good head! Chef Olivier Kohen is the former head chef of Café Arsène, and knows exactly what the young gones want when they sit down together. A friendly cuisine based on well-worked products, with the triptych of the Instagramable plate: generous, creamy sauces, well portioned proteins, and always a crunchy "twist" to finish. Details include a soft-boiled organic egg and polenta mouillettes with ossau iraty, a crispy potato with truffle mascarpone onion confit. Main courses include a joyful black pudding with seasonal herbs, and a pavement of Camargue pike-perch, preserved leeks and bacon colonnata. The dessert menu is short, but offers three choices: an unctuous and perfectly regressive sweet moment (warm dark chocolate mousse and blond chocolate ganache); a citrus pavlova and lemon curd with tangy notes; and the more classic floating island with rose, Madagascar vanilla and quince syrup. What to drink? Six wines by the glass, and some great regions to discover. This is a young, sparkling address well worth discovering.
