In the heart of the Montagne de Reims, the auberge is one of those iconic places where you naturally stop off, not only for the fine champagne cellar, but also for the four-handed cooking of Dominique Giraudeau and Pascal Champion. Established in 1992 and 1998 respectively, the two chefs offer a fine cuisine of noble products, with menus priced from €55 to €240. Highlights include lobster melon with sweet and sour vinaigrette, semi-cooked salmon with caviar, St. Pierre with gamberro rosso and Gillardeau oysters, farm squab with pepper sauce and strawberry pavlova.
