Gourmet Restaurant All Ajaccians know this customary address off the Propriano road. The owner is at ease with his regulars, and welcomes tourists with kindness and a touch of humor. The cuisine focuses on island traditions, products and recipes, with a rather sophisticated finish and prices to match: tomato tatin, chef's three-meat terrine, roast cabri in an ancestral recipe, low-temperature veal cheek, lamb confit with soissons beans and cooking juices, and even a wellington-style beef en croûte with chanterelle mushrooms. The plate is copious, the desserts elaborate (rhubarb soup with fresh strawberries and verbena sorbet, creamy bergamot ganache and chestnut cookie...), cellar well stocked with wines from the region.
