Chef's Restaurant Of course, it's no surprise to find the former chef of the K2 group's Montgomerie in Courchevel at this level. Pieter Riedijk has left the peaks of 1850 for a place of his own, at the bottom of the lacets, concentrating on a cuisine rooted in a traditional base put back in its time, in the direct line of his previous experiences, notably at Emmanuel Renaut. The small house, with its whitewashed beams and bistro look, gives you confidence: cream of white bean with tomato and pine nuts for a simple, fresh starter, very good Arctic char cooked on the skin, celery, beurre blanc and wild hogweed, finishing with a pleasant melilot mousse, well present, for a good cook's dessert. The wine list is a real highlight, with plenty of bargains from €40 upwards, and a good selection by the glass.
