Michael Herrera is a pure product of the Marseilles scene. Since his early days, he has never left the city that trained him, patiently building his reputation from one table to the next. From sous chef at Bistrot du Cours to chef at Café des Épices, he learned to work with market produce with rigor and spontaneity. " In Marseille, you don't cheat with the product. Customers sense it immediately," he sums up.
La Piscine: feet in the water of the Old Port
In 2018, Michael Herrera joined the kitchens of La Piscine, one of the most sought-after addresses in the Old Port. The setting is exceptional, and expectations are high. The young chef quickly climbed the ranks to become head chef in 2023. It was here that he honed his vision of a no-nonsense Mediterranean cuisine, built around local, seasonal produce, where fish and vegetables from the South take center stage.
Rose: a personal address in Marseille
With Rose, Michael Herrera has taken a decisive step forward. The restaurant, soon to open in Marseille, will embody his vision of a simple, meticulously-crafted menu, far removed from the effects of fashion.
