Manon NEGRETTI-GUICHARD
Chef : 1 restaurant Trained by Éric Trochon at Le Semilla, Manon Guichard opened Bonnotte in Boulogne-Billancourt.While in medical school, Manon Guichard decided to use her contacts to try out for a position in the kitchens of the George V. "At the end of the day, I knew this was what I wanted to do. "At the end of the day, I knew this was what I wanted to do," she says, and enrolled at the Ferrandi school for a refresher course. During her studies, she trained as a commis at La Méditerranée, in Paris, with Denis Rippa, and at L'Épi Dupin, with François Pasteau. After an internship with Philippe Etchebest at Hostellerie de Plaisance, Saint-Émilion, and another at Restaurant Lasserre, with Christophe Moret, she joined the George V as a commis under Éric Briffard. This experience taught her one thing: the hotel business was not for her.
She then contacted Éric Trochon, for whom she had been a training commis at the 2011 MOF competition. "In 2016, she also became a consultant to Château Malromé, in Saint-André-du-Bois (Gironde), for the creation of café Adèle.
Then, in 2017, she co-founded Café Ineko, in Paris's3rd arrondissement, as head chef. Thanks to her partner Inès de Villeneuve, she works for fashion houses. "I owe her a lot. Since November 2022 , Manon and her husband Antoine Guichard have been running their own restaurant, Bonnotte, in Boulogne-Billancourt. Gault&Millau immediately awarded them a handsome 12/20 rating and included them in the 2024 edition of 109 - Le Sang neuf de la gastronomie française.
