Héloïse CHÂTEAU
Héloïse Château began her career with the Compagnons du devoir in Nîmes. After an apprenticeship in a boutique in Poitiers, she moved to Bordeaux to work in brasserie and semi-gastronomy."It allowed me to see and learn different ways of managing and catering," she explains.
In 2019, Héloïse Château became head pastry chef at the Racines gourmet restaurant in Bordeaux."I grew there, gained confidence, and improved my creativity," she comments. Three years later, she won the bronze medal at the 2021 French Dessert Championship."I discovered myself, it brought out things in me that I didn't think I had."
Buoyed by this success, she was contacted by Maison Lalique, who offered her the position of head pastry chef. She joined Château Lafaurie-Peyraguey, in Bommes, working with chef Jérôme Schilling. A few months later, Gault&Millau awarded her the Pâtissier Nouvelle-Aquitaine 2022 trophy. His next adventure? Retrying for the French Dessert Championship to win first place.
