Summer wines: 5 Chablis

Chablis produces only whites. They can be enjoyed young, but also age well for several years, and even longer for the premier and grand crus. Generally chiselled and fine, these wines never lack fruit in their youth, especially in warm vintages. Chablis may be more gourmet today than it was twenty years ago, but it nonetheless has a formidable purity and sharpness that make it a perfect match for any table. Ideal for summer, even Indian summer, served chilled but not iced, it can be opened on its own as an aperitif.

Racy, the nose opens with honeysuckle, white fruit and root notes. The palate is greedy, quite similar to the nose, more round than straight, with a grilled reduction that finishes dry and straight. Open with grilled chicken this summer.

Lovely, fresh, fine nose, very Chablis in spirit, blossoming on the chalky side of the terroir. On the palate, the wine is full-bodied and delicious. The beautiful grapefruit bitters on the finish are perfectly extended. A timeless classic to open with oysters.

A benchmark local and national winery, La Chablisienne presents a very large-run Petit-Chablis 2020, with the fine, fresh, airy nose you'd expect from a Petit-Chablis. There's no artificial over-concentration to weigh it down. Fruity on the palate, with vegetal notes that keep it lively and fresh. Ideal for summer, from aperitif to dessert.

Well-balanced nose with ripe fruit and hints of fresh quince. The palate matches it, very aromatic and greedy. The acidity accompanies a fresh finish with fine bitters. A petit-chablis gourmand to be opened with salmon toast as an aperitif.
