Leaning against a cliff between sea and sky, this building was once owned by the English Faber family, who founded the Dinard spa.then Lord Hamilton, who gave it a neo-medieval feel by adding crenellations in the style of some English castles. Nestled in the Villa Lord Hamilton, the harbour master's office or the observatory, the 23 rooms and suites are inspired by the sea, with their clear lines and ocean tones, all opening onto the waves. To offer their guests the very best, Lydwine and Yann have also designed a spa offering a comprehensive range of treatments, to be discovered before heading out to the extraordinary swimming corridor overlooking the sea. To round things off, Julien Hennote's cuisine is served in the Art Deco room of the Pourquoi Pas restaurant or on the waterfront terrace.

The Castelbrac restaurant offers a view, a high standard and a 2-toque plate that's always well polished. It's the perfect place to make a gourmet stopover in Dinard, entrusting your interests to a brigade led by chef Julien Hennote. Sobriety and elegance on the plate too, with cooked and raw scallops with pear and ground pear, pollack rubbed with tangerine and confit with mandarin and confit, endive and watercress, crispy parsnips, melting chocolate cocoa nib ice cream from a €70 no-frills menu of great precision. Impeccable service, classic and rather expensive generalist cellar, well equipped on the Loire.

Alexandre Frin has recently set up shop in a superb semi-circular red-brick building just a stone's throw from the sea, where he delights us with his oceanic cuisine, in which vegetables are ultra-present and can sometimes be the central element of the plate. Let yourself be seduced by the beef heart confit, sea lettuce yogurt and nori green bean salad. The tuna just snacked on a basil-glazed broth is also a 2-toque dish, especially when accompanied by a Collioure wine from Domaine de la Rectorie. Ludivine's warm welcome and extensive wine list.

Alain Batt has made a name for himself the world over. He patented the minicroissant concept. His fromage blanc tart is a knockout. He has developed a gourmet range based on bergamot, a citrus fruit imported to Nancy and adopted. He also offers a wide range of babas with Lorraine mirabelle plum, Lorraine pear, rum... chocolate bars, chocolate bonbons and a wide range of specialties.

Philippe Renault is no ordinary baker. On your way back from the beach, you'll come across his newly refurbished store. Sourdough breads, Gana flutes, special breads and cakes, salted butter caramel (very local)... are all home-made products. And the "paris-dinard" rivals the paris-brest with a base of roasted buckwheat, a little praline, a little caramel, all in the shape of a triskel, a Breton delicacy to leave in everyone's hands.
