Outstanding Hotel
It’s a family affair. Cloé, the daughter of the former owners, trained at the renowned Vatel hospitality school in Paris and is now at the helm of the Moulin des Ruats. After working at the Mandarin Oriental, the Park Hyatt, the Westminster, and the Warwick… she embarked on this adventure with David. He is a pastry chef who trained under Philippe Conticini, Sébastien Bouillet, and Cyril Lignac. He also served as pastry chef at the Mandarin Oriental alongside Thierry Marx… That’s quite a resume! When they took over this property, they were tasked with preserving its rich history. Founded in the 18th century, the building served as a flour mill, then a tannery, and later an oil mill, before becoming a family-run guesthouse in 1917. Today, this three-star hotel is designed to blend seamlessly with its surroundings: a lush forest. Built and renovated with the utmost respect for the environment, this hotel in the heart of nature is situated on the riverbank, just a few kilometers from the center of Avallon. Perfect for a stay in Burgundy that is both comforting and a welcome change of scenery, the hotel offers 25 comfortable and elegantly decorated rooms.
