Located on a small street between a school and a church, a five-minute bike ride from an artesian well where he draws water to produce his sake, Stéphane Allary opened his microbrewery in May 2026. With a decidedly modern style, he offers two varieties of his Parisian urban sake. Numerous limited-edition batches will round out the lineup.
